Lemon Zucchini Cookies 2 c Flour
3/4 c Margarine
1 c Shredded zucchini
1 Egg, beaten
1 ts Grated lemon rind or juice
1 ts Baking powder
3/4 c Sugar
Sift together flour and baking powder. Cream sugar and margarine until fluffy. Add egg, zucchini and lemon rind to creamed mixture. Stir in flour mixture.
