Chocolate Oatmeal Sandwich Cookies

2 1/2 c Plus 2 Tblsp. margarine; softened (divided)
1 1/2 c Firmly packed brown sugar
1 c Granulated sugar
2 Eggs
4 ts Vanilla extract; divided
2 1/2 c Unsifted flour
1/2 c Hershey's cocoa
2 ts Baking soda
1 ts Salt; (optional
6 c Oats
12 oz Semi-sweet chocolate chips
1 cn Sweetened condensed milk; (14 oz)

Heat oven to 375 degrees F. In mixer bowl, beat 2 1/2 c. margarine and sugars until fluffy. Beat in eggs and 3 tsp. vanilla then combined flour, cocoa, baking soda and salt. Stir in oats. Drop by tablespoonfuls on ungreased baking sheets. Bake 10 minutes or until set. Cool. In saucepan, combine chips, sweetened condensed milk, remaining 2 Tblsp. margarine and 1 tsp. vanilla. Over medium heat, cook and stir until chips melt. Immediately sandwich cookies together with chocolate mixture. Makes about 4 1/2 dozen sandwich cookies.
