Chocolate Shortbread Cookies 8 oz Unsalted Butter, at room temperature
3 1/2 oz Confectioners Sugar
1 ts Vanilla Extract
10 oz All Purpose Flour
1/2 c Coocoa Powder
1/4 ts Salt
Preheat oven to 350 degrees. In the workbowl of the food processor, combine butter and sugar. Add vanilla and process until creamy. Toss together flour, cocoa, and salt and add to the butter mixture. Process until just combined. Wrap dough in plastic and chill briefly, just until firm enough to roll. Turn onto lightly floured board and roll until 1/4 inch thick. Cut with 2 1/2 inch heart cookie cutter. Transfer to parchment paper lined cookie sheet and bake 8 to 10 minutes. Chocolate Shortbread Cookies printer friendly version located here.
