Pumpkin Cake Cookies 3/4 c Brown sugar; firmly packed
1/4 c Margarine; softened
3/4 c Pumpkin; cooked; mashed
1 Egg
1 1/4 c All-purpose flour
1/2 ts Baking powder
1/4 ts Baking soda
1/2 ts Ground cinnamon
1/4 ts Ground allspice
1/8 ts Salt
1/8 ts Ground nutmeg
Cream sugar and margarine at medium speed of an electric mixer
until light and fluffy. Add pumpkin and egg; beat well. Combine flour and
next ingredients; add to creamed mixture, mixing well. Drop dough by
heaping tablespoons 2 inches apart onto cookie sheets coated with cooking
spray. Flatten tops slightly. Bake at 350~ for 18 minutes or until lightly
browned. Remove from pans; cool on wire racks. Yield: 28 cookies
