Prize Cookies

1 c Shortening
1 1/2 c Sugar
3 Eggs
3 c Unsifted flour
1 t Baking soda
1/2 t Salt
1 pk 9 oz Condensed mincemeat crumbled (NoneSuch)

Preheat oven to 375F. In a large mixing bowl, beat shortening and sugar together until fluffy; add eggs and beat well.

Stir dry ingredients together; gradually add to shortening mixture. Mix well. Stir in mincemeat.

Drop by teaspoonsful 2" apart onto greased baking sheets. Bake 8-10 minutes or until lightly browned. Cool. Frost with light confectioners sugar/milk/vanilla frosting.
