Date Filled Oatmeal Cookies 2 c Sugar
2 c Water
2 c Ground dates
2 tb Butter
6 c Brown sugar
8 Eggs; beaten
4 ts Vanilla
8 c Sifted flour
4 ts Baking powder
4 ts Salt
2 ts Soda
10 c Quick oats
Cook first 3 ingredients for 15 minutes. After cooking, stir in 2 TBl
flour and cool. Cream butter and sugar well. Add eggs and vanilla.
Mix well. Add dry ingredients. Mix well. Chill at least one hour.
Roll out on floured surface. Put filling on one cookie and top with
another and seal the edges. Bake at 375 degrees. Cut a small hole in
the top so cookie won't explode.
