Chewy Applesauce and Peanut Butter Cookies

3 1/2 c All-purpose flour
1/2 ts Salt
1 1/2 ts Baking soda
1 c Unsweetened applesauce
1 c Crunchy peanut butter
2 1/2 c Brown sugar; firmly packed
2 Egg whites
2 ts Vanilla

In small bowl, combine flour, salt and soda; set aside. Thoroughly mix together remaining ingredients. Add dry ingredients, mixing until combined. Drop by rounded measuring tablespoonfuls onto cook sheets coated with no-stick cooking spray. Bake in 375 F. oven about 10 minutes or until light golden brown. Cool on wire racks. Yield: 5 dozen cookies, 2 1/2-inches in diameter.
