Austrian Jam Cookies 1/2 c Butter -- softened
1/2 c Sugar
1 ts Vanilla
1 Egg,
1 1/4 c Flour -- sifted
2/3 c Walnuts -- chopped
Raspberry jam -- no seeds separated
Beat butter, sugar, vanilla and egg yolk in medium bowl with electric
mixer at high speed until light and fluffy. Stir in flour; gather
dough into ball; wrap in foil. Refrigerate until firm. Roll
teaspoons of dough into balls. Dip in slightly beaten egg white and
roll in chopped nuts. Place on ungreased cookie sheets 1 inch apart.
Make indentation in cookie and fill with jam. Bake in slow 300
degree oven for 20 minutes or until lightly golden. Cool on wire
