Zucchini Cookies (For Shipping)

1/2 c Butter softened
1 c Brown sugar
1 Egg
1/2 ts Vanilla
1 c Flour
1/4 ts Baking soda
1/4 ts Baking powder
1/4 ts Salt
1 sm Zucchini; shredded
1 c Oatmeal
3/4 c Finely chopped nuts
1/2 c Coconut
1/2 c Raisins
1 c Butterscotch chips

Cream the butter and sugar. Add the egg and vanilla and beat well. Sift flour, baking soda, baking powder and salt and mix in. Add the shredded zucchini. Stir in all remaining ingreiendts. Drop by teaspoon onto greased cookie sheet. Bake in pre-heated 350-degree oven for 12 - 14 minutes or until cooked. Cool slightly before removing from pan.
