Pumpkin Cookies 1 1/2 c Shortening
3 c Sugar
3 Eggs
4 c Pumpkin
3 ts Vanilla
5 1/2 c Flour
1 ts Salt
3 ts Baking powder
3 ts Baking soda
3 ts Cinnamon
Cream shortening, sugar and egg together; stir in pumpkin and
vanilla. Sift dry ingredients together and stir into shortening
mixutre. Preheat oven to 350 oF. Drop by teaspoonfuls onto ungreased
baking sheet and bake 12 - 15 minutes. Makes 6 - 8 dozen cookies.
Variations; add chopped nuts, or chocolate chips. Frost with cream
cheese frosting.
