Honey Cookie Cut-Outs

2/3 c Shortening
2/3 c Sugar
2 Eggs
2 ts Vanilla
1 1/3 c Honey
5 1/2 c Sifted flour
2 ts Baking soda
2 ts Salt

Mix the first 5 ingredients thoroughly. Sift together the flour, baking soda and salt. Add dry ingredients to the honey mix. Chill for several hours. Roll out (not too thin) and cut in shapes. Bake on greased cookie sheet at 375 degrees for 6 - 8 minutes, or until golden brown. Watch the edges.
